Can I add custom properties to a ticket?

For example, I would like to add:
Effort/Difficulty (High, Medium, Low)
Risk: (High, Medium, Low)
Stability: (High, Medium, Low)
Status: (Proposed, Approved, Incorporated, Validated)

Can this be done with Trac?
